Shrimp Scampi

Pasta is always a big hit with my kids.  This is a light, quick dish that is sure to please the entire family.

Shrimp Scampi

16 cleaned tiger prawns or about 1 lb of large shrimp

4 vine tomatoes peeled and quartered

LOTS OF Extra-virgin OLIVE OIL

4-5 cloves of garlic pressed

1/2 cup or so of white wine

salt and pepper

handful of chopped Italian Parsley

1 lb of Linguine

Peel tomatoes and cut into quarters.  Set a heavily salted pot of water to boil for the pasta, cook pasta until al dente about 8-10 minutes.

Put about 1/4 cup or so of olive oil in pan on medium heat, add garlic and tomatoes.  Cook 5 minutes, add the wine and then cook an additional 5 minutes or until tomatoes are soft and melted.  If garlic is getting to brown during this time lower heat.

Add shrimp, salt and pepper,  and continue cooking until all shrimp are pink and just cooked through about 5-8 more minutes.  Drain pasta, reserving a cup of the cooking water.  Toss pasta, shrimp sauce and 1/2 cup of cooking water together.  Drizzle with 2 Tbsp more of olive oil if you like.  Serve with or with out parmesan cheese.
