Roasted Cauliflower

When you roast cauliflower at a high temperature it becomes yummy and sweet.  Since it is in season, and since this dish is great, hot, room temp or cold, it is perfect for spring.

Roasted Cauliflower

1 head of cauliflower, cut into florets of roughly equal size

1 shallot, diced

about 2 Tbsp olive oil

salt and pepper

Preheat oven to 425. Put cut cauliflower in a roasting pan, drizzle olive oil over it. Add shallots and salt and pepper and toss.  I use my hands to toss or you can use spoon and fork. Put in oven for about 25-30 minutes until browned.
