Nectarine Boysenberry Cookie Cobbler
This warm spring So Cal weather and a recent shipment of Harry and David Nectarines gave me a hankering for a fruit crisp, cobbler.
3 med nectarines halved, pitted and sliced thin
2 Baskets of boysenberries
3-4 Tbsp white reisling, brandy would be good too
2 tsp corn starch
1/4 plus a little more white sugar
pinch of salt
Combine all in bowl, toss and put in greased and floured baking dish. I use Pam Baker’s spray to do the greasing and flouring. Pre heat oven to 400 degrees, cook fruit only for 10-15 minutes, while fruit cooking make topping below.
2 Sticks unsalted butter room temp or softened in microwave 10-15 seconds
1/2 cup brown sugar
1/2 cup white sugar
Dash of salt
Beat together until fluffy.
Then add
2 eggs
1 tsp vanilla
Beat until smooth.
Then add 1 cup of flour and 1/2 tsp baking powder and beat until combined.
Remove fruit from oven and plop batter on top of cooking fruit and return to oven for another 30-40 minutes.
