Honey Mustard Tarragon Salmon

After the fish last night I got a request for some more fish today.  Here is what is being served tonight.

Large salmon Fillet (you can cook it whole or cut into smaller fillets)

1 to 1 ratio dijon mustard to honey (enough sauce to paint on salmon and cover it)

chopped fresh tarragon

1 large or 2 small tomatoes

capers

dry white cooking wine and water

Preheat oven to 400 degrees.  Put salmon in glass baking dish. Mix together honey and dijon and paint onto salmon.  Sprinkle chopped tarragon on fillet. Slice tomato and put on each fillet if using smaller fillets, place about 3 tomatoes if using bigger fillet.  Sprinkle some more tarragon over tomato.  Place a few capers on top of tomato and tarragon.

Use a 1 to 1 ratio of wine to water.  Use enough to keep salmon moist during cooking, pour it AROUND salmon, NOT over it.  Bake uncovered at 400 degrees for about 15 minutes (time will depend on size of fish and if you are cooking it whole it will take longer)
