Easy Yummy Corned Beef

In honor of St. Patrick’s day today and my mom’s birthday, a meal fit for a leprechaun!  The kids love it, especially when they can dip their meat, potatoes and carrots in mustard.

1 Pre-marinated corned beef  (I have tried Whole Foods & Trader Joe’s, I think I liked the Trader Joe’s version better)

2 bottles of Guinness

about 1 lb small red potatoes, washed and cut into uniform size

about 1 lb carrots, washed, unpeeled and cut into 1 1/2-2 inch pieces

1 head of cabbage, quartered

Put entire package of corned beef in large pot.

Add 2 bottles Guinness and about 2-3 cups water enough to cover corned beef.  Put on stove at high heat, bring to boil.  You will need to watch this closely as the beer makes it foamy.  Once boiling, lower heat to simmer cover and cook for about 3 hours.  After about 2 hours add potatoes and carrots to the pot if you are using them.  Add cabbage during last 1/2 hour.

Serve with any kind of mustard.
