Easy Popovers

Eating popovers reminds me of lunch at Bullocks or  Neiman-Marcus with my mom.  They were one of my favorite childhood foods and still remain in the top 10.  Nothing is better than a warm popover with butter.  They are a great addition to any dinner and can make a soup like yesterdays feel like a complete meal.  These are easy and quick (5 minutes) to whip together, and the kids get a kick out them.

2 eggs

1 cup milk

1 cup flour

1/2 tsp salt

Put eggs in bowl, add milk, flour and salt.  Mix well with spoon, ignore lumps.  Fill muffin or popover pans 3/4 full, put in a COLD oven.  Turn oven on to 450, bake for 25-30 min, DO NOT open oven door.
