Easy Honey Curry Chicken

This is a quick and easy classic dish.  The kids love it and it is better than breaded and fried nuggets.  It tastes just as good cold as it does hot.  It can marinate in the sauce or be put right in the oven.  Paired with a veggie like broccoli and a starch like brown rice or farro, this makes it easy to get a healthy meal on the table.

1 chicken 3 1/2-4 lbs cut into 1/8ths

4 Tbsp unsalted Butter melted (If you want to use less butter use half the butter here and add 3 Tbsp milk)

1/4 cup mustard regular yellow or dijon

1/2 cup honey

1 tsp curry powder

1 tsp salt

lemon juice or zest (optional)

Put chicken in glass baking dish big enough to fit it.  Melt butter, add remaining ingredients and mix together.  Pour over chicken, this can be done 4 hours prior to cooking or just before cooking.  Bake in 350 oven for 1 hour and 15 min, basting occasionally until browned.  Serve with rice or Farro and broccoli or another veggie.
