Breakfast Smoothie with Granola

The warmer weather means that one of my families favorite breakfasts is back in play. This is perfect on a warm spring or summer morning.  Refreshing and somehow both light and substantial at the same time.  Plus, the Acai is rich in B vitamins, essential fatty acids, fiber and protein, it is a true South American superfood.  Paired with the antioxidants in the blueberries and the potassium in the banana this is a good way to start any morning.

1 – 1 1/2 frozen smoothie packs of Acai

Acai Smoothie Pack

couple handfuls of frozen or fresh blueberries

1-2 bananas

about 1 cup or so of almond milk

about 1/2-3/4 cup coconut milk, I prefer to use the light coconut milk

Sometimes I add a few ice cubes for a thicker consistency

Mix all above in a blender until mixed.

Top with granola.  I prefer vanilla almond granola that is sweetened with fruit juice and lower in fat.

This makes enough smoothies for my 2 kids and my husband and I.  We often experiment with different fruits keeping the Acai, almond and coconut milk base.  Sometimes we add frozen mango, boysenberries, strawberries, or even frozen yogurt.  I serve it in glasses topped with granola and a spoon.
