I’ll Give You Good And Plenty….Zesty
The whole lime chicken thing the other day got me thinking about citrus zests. Zesting used to be a pain, but now I LOVE it, mainly because a handy woodworking tool has been repurposed for citrus zest.
I follow a policy (which I picked up in my cooking mafia) of using zest and juice from citrus together regardless of what the recipe says. Basically, get the zest from the fruit when it is whole. This is made all the easier with the help of a microplane zester. This is a MUST HAVE kitchen tool. So, you zest the fruit first while whole, cut in half, and then juice.
