Bundt Cake
LOVED the movie The Stepford Wives (1975 version, not that horrible 2004 situation)–a great horror movie, a great feminist movie (starring Ginger from Gilligan’s Island), overall an important cinematic moment, dark and steeped in meaning.
While I live on the Westside of Los Angeles, sometimes I feel like I live in Stepford, CT.
I love food and cooking. I think it shouldn’t be scary or mysterious, and I think it needs to be acknowledged that regular people cook. I came to realize that I should blog about this few a few different avenues. The main one being that my kids lunches get a lot of attention at their school. I basically pack leftovers from dinner the night before. I do this mainly because the great peanut butter and jelly sandwich has been banned from my repertoire (due to nut allergy at the school) and my kids detest other kinds of sandwiches. I don’t have time to deal with figuring out lunch, but I do figure out dinner almost everyday. I can squarely thank my kids preschool teacher for planting this insane idea in my head. Secondly, it happens often enough that when I bring something somewhere people react as if I did something amazing after having a bite. I firmly believe everyone can create good food, so I am here to help.
Here’s a nice Bundt Cake Recipe to get you started:
Chocolate Pistachio Bundt Cake
I came upon this recipe years ago. It is my quick go to when I need to bake something. While it unfortunately is not nut free, it is sublime and it has WINE in it !!
1 box yellow cake mix
1 box instant Jell-o pistachio pudding mix
1 cup vegetable or canola oil (I use canola)
3 eggs
3/4 milk
1/2 cup white wine (often I use a little more)
6 oz Hershey’s chocolate syrup
Preheat oven to 350. Mix cake mix, pudding mix, oil, eggs, milk and wine in big bowl with whisk or spoon (not electric mixer) until it is really all mixed together, when you think it is mixed enough, mix a little more to be sure, I mean REALLY mix it, this is the hardest part. Grease bundt pan (I use pam baking spray). Pour 3/4 of cake mix into prepared bundt pan. Add chocolate syrup to remaining mix in bowl and mix until incorporated. Pour chocolate cake mix into bundt pan, poke with fork so chocoate can seep through pistachio mix. Bake 45-55 minutes.
