This is an easy meal, starch and protein all made together and in under 20 minutes. The original recipe is from The Splendid Tables How to Eat Supper, I made a few alterations but not many.
POTATOES
I used about 1lb-1 1/2 lb fingerling potatoes, you can also use 10-12 small red skin potaotes I leave them unpeeled
Boiling salted water
Put potatoes in boiling water and simmer for 15 minutes, until slightly firm when poked with knife or fork. Drain in collander and rinse under cold water to stop cooking.
This is an easy and satisfying dinner. I served it with Trader Joe’s harvest couscous, spinach, and salad. It is delicious.
4-6 pork chops 1 inch thick ( I use boneless, but you can use bone-in)
salt
pepper
flour
paprika
1-2 Tbsp butter
fresh marjoram chopped
fresh thyme chopped
1/4-2/3 cup dry vermouth
This is great on steak, chicken, or lamb. It makes enough to use for one dinner and will keep great in the fridge for several months.
1 1/2 cups olive oil
3/4 cup soy, tamari or shoyu sauce
1/4 cup worcestershire sauce
1/2 cup red wine vinegar
1/3 cup lemon juice
3 Tbsp dry mustard
1/2 tsp pepper
3 tsp salt
2 tsp liquid smoke (optional)
1 1/2 tsp parsley minced (optional)
2 garlic cloves crushed
Mix all ingredients in blender. Store in jar in fridge.
